Edoardo Dottori epitomizes a rare blend of passion and expertise, remarkable even at his young age. Growing up amidst the vineyards of Castelli di Jesi, Edoardo's formal education in agriculture and viticulture laid the foundation for his future in winemaking. Armed with degrees in Viticulture and Enology, including a doctoral focus on soil cover cropping, he pioneers innovative solutions to combat climate change's effects on winemaking, and this journey has propelled him to the forefront of Verdicchio production, earning him the esteemed title of Italy's Best Young Winemaker by Slow Wine. With a profound understanding of the land he cultivated since his childhood, Edoardo's organic and biodynamic practices reflect his commitment to environmental harmony. His wines, produced with minimal intervention, eloquently express the terroir of the San Paolo and Cupramontana subzones. His dedication extends beyond the vineyard, as he imparts knowledge to future generations through teaching. As Edoardo plans to expand his winery, transitioning from third-party facilities to in-house production, he remains resolute in his pursuit of quality and sustainability, ensuring a legacy of excellence for generations to come.
Edoardo’s vineyards are located in two different sub-zones of the Castelli di Jesi appellation: Cupramontana, and San Paolo di Jesi. The former is known for juicier, rounder wines with a riper fruit profile, the second is well known for age-worthy, vibrant and more mineral wines.

"Collebianco" Verdicchio dei Castelli di Jesi Classico Superiore DOC
100% estate grown and organically farmed Verdicchio. Edoardo’s vineyards are in the San Paolo di Jesi area, considered a “Grand Cru” location for this variety. The soils is rich in limestone and chalk. Collebianco means “white hill”.
Fermented with native yeasts in stainless steel, and aged in the same vessels for 8 months, followed by an additional 6 months in bottle.
This is a zippy, zesty and savory white, offering plenty of citrus and white flowers notes. A vibrant, cleansing finish makes this a super versatile food wine.
