Fibbiano

Nestled in the hills between Pisa and Volterra, Fibbiano has been founded with the clear intention to preserve the most classic native Tuscan varieties: Sangiovese, Canaiolo, Colorino, SanForte, Colombana and Vermentino. Brothers Matteo and Nicola Cantoni farm 50 acres of vineyards practicing organic farming. Soils are rich in marine fossils and shells. All wines are made with native yeasts.

  • Fibbiano Organic Vermentino Toscana

    Fibbiano Vermentino Toscana IGT

    100% organically farmed Vermentino. Native yeasts fermentation followed by 6 months of aging with the fine lees in concrete vats. Delicious aromas of lemon peel and lavender.

  • Fibbiano Le Pianette Sangiovese Colorino

    "Le Pianette" Sangiovese/Colorino Toscana IGT

    70% Sangiovese and 30% Colorino, both farmed from organic vineyards. Spontaneous fermentations in steel vats is followed by aging in concrete and Slavonian oak barrels. A classic Tuscan blend delivering all the hallmark aromas of coastal Sangiovese: juicy cherry, fresh herbs and a hint of tobacco.

  • Fibbiano Ciliegiolo Tuscany Red Wine

    Ciliegiolo Toscana IGT

    100% Ciliegiolo, a native grape of Central Italy related to Sangiovese and grown in particular on the Tuscan coast thanks to its ability to tolerate high temperatures. At Fibbiano, Ciliegiolo is manually harvested in mid September, and fermented with its own yeasts. Aged first in cement vats (with malolactic), then in large Slavonian oak casks for 12 months , and then in bottle for 4 months. This is a fruit-forward red loaded with cherry and raspberry aromas, framed by gentle tannins. Made from organic grapes.

  • Fibbiano Aspetto Sangiovese Toscana

    "L'Aspetto" Sangiovese/Canaiolo Toscana IGT

    50% Sangiovese and 50% Canaiolo, from Fibbiano’s estate vineyards rich in marine shells and ancient corals. Fermented with the native yeasts in stainless steel, and then aged in cement vats (4 months, with malolactic fermentation), large Slavonian oak barrels (16 months), and bottle (12 months). Sangiovese meets his natural partner, Canaiolo, for a blend that delivers a mouthful of joyous cherry aromas, elegant notes of mediterranean shrub and a bright, sleek acidity on the finish.
