Palmento Costanzo
In 2010, the Costanzo Family embarked on a transformative journey by acquiring an ancient Palmento nestled in Contrada Santo Spirito near Passopisciaro village on the renowned northern slope of Mount Etna. Alongside this historic winemaking facility, they acquired a few hectares of pre-phylloxera vineyards. With meticulous care, they restored the Palmento and expanded their vineyard holdings, replanting exclusively with native grape varieties such as Nerello Mascalese, Nerello Cappuccio, Carricante, and Catarratto, using the traditional "Alberello" system. Additionally, they secured a plot in Contrada Cavaliere, renowned for its Carricante vines.
Their winemaking philosophy revolves around showcasing pure varietal expression and the unique terroir of Etna. Each single vineyard is harvested and fermented separately with native yeasts to preserve authenticity. Aging occurs in stainless steel tanks, cement vats, or neutral Slavonian large oak vats, respecting the vineyard's distinct character.
Led by Valeria Costanzo, her daughter Serena, and a dedicated team guided by Sicilian winemaker Nicola Centonze, Palmento Costanzo operates with organic certification and is recognized by the prestigious Equalitas Certification Program for its sustainable practices and commitment to environmental and social responsibility.
